The purpose of this study were to understand the influence of culinary staff’s emotional labor of work in hotels upon job satisfaction, organizational citizenship and turnover intention. Based on total 223 samples obtained from empirical research, this study reviewed the reliability and fitness of the research model and verified a total of 7 hypotheses using the AMOS program. The hypothesized relationships in the model test simultaneously by using a structural equation model(SEM). The model’s fit, as indicated by these indexes, was deemed satisfactory, thus providing a good basis for testing the hypothesized paths. The SEM showed the that the emotional labor had a positive and negative significant influence on job satisfaction. Also, job satisfaction had a positive significant influence on organizational citizenship behavior and negative significant influence on turnover intention. The moderating effects on peer support and age career do. Limitations and future research directions are also discussed.
