Kombucha is a mixed fermented tea made by adding SCOBY (Symbiotic Culture of Bacteria and Yeast) and sugar to green or black tea brewed water. Functions such as antioxidant, anti-inflammatory and anti-obesity have been studied. In this study, we intend to develop kombucha products with enhanced inner beauty functionality. Accordingly, MK (Mint Kombucha) was prepared by adding GWE and MCE, which are excellent functional resource extracts, through component analysis and efficacy evaluation. The physicochemical properties and inner beauty functional efficacy of MK and K(general kombucha) were compared, and as a result, the superiority of the developed product in anti-inflammatory, skin whitening, and anti-obesity functions was confirmed. Accordingly, the possibility of development and utilization of MK as a beauty food was confirmed. In addition, the utilization of GWE, a tea manufacturing waste extract, was increased, and the industrial application potential of MCE as a functional natural material for inner beauty was also confirmed.
